fantastic oven

The EB 200 models are several seasons old now; even if you buy one "new in box" it's likely been sitting in a warehouse for at least 5 years. That said, this Gaggenau oven is one of the steadiest ovens I've ever used, and can hold some insanely low temperatures. The oven has a proofing mode that will set it at 100 degrees; the lowest convection temp is 120 degrees, but even that is much lower than any other oven I've ever owned.These originally retailed around $5k; I can't really say if half off represents a good price point for an old design. I *can* say that these are definitely more than mere stylish toys to be featured in designer kitchens- they are built to cook in. I picked mine up used; many kitchen showrooms have been selling off floor models in the last year or so. (It says a lot about the elegant styling that designers were able to hold on to them so long.)The side-swing door is great for maneuvering large/bulky items in and out of the oven; however, it is critical that the oven be installed level, because you definitely do not want a hot oven door to come swinging back on you while you're trying to get the pies out.Did I mention that the oven is really pretty? Especially the blue enamel interior. So pretty.
